Carrot Cake Recipe

For those who are sweet tooth just like me and who loves cupcakes I'd like to share with you my Carrot Cake Recipe which I made last christmas. You can also place this on a round pan or rectangular pan. All you need are:

2 cups grated carrots
2 cups sifted All Purpose Flour
1 cup refined sugar
1 cup brown sugar
1 cup vegetable oil/corn oil
1 cup crushed pineapple (drain)

2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon powder
1/2 tsp nutmeg
1 tsp vanilla
1 tsp salt
1 tbsp orange rind (optional)
3 eggs

1/2 cup raisins
1/2 cup chopped walnuts
1/cup grated cheese (optional)

Preparation:

1. Preheat the oven to 350 F ( 175 degrees C). Grease a 12x6 inch baking pan. Set aside.
2.In a large mixing bowl combine sugar, oil, carrots, pineapple, raisins and eggs. Mix together.
3. In a separate mixing bowl, sift and mix together remaining dry ingredients and then pour to the other bowl with carrot mixture. Gently mix them all, but do not over mix. Add Nuts.
4. Spread the batter into grease pan.
5. Bake for 50- 60 minutes or until toothpick inserted into cake comes out clean. Remove from oven and let it cool.
